Quinoa Salad – Healthy & Refreshing Recipe

Description

A refreshing and nutritious quinoa salad packed with fresh vegetables, herbs, and a zesty dressing.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

 

  • Salt & black pepper to taste

Instructions

  • In a saucepan, bring water or vegetable broth to a boil. Add quinoa, cover, and simmer for 15 minutes until cooked. Fluff with a fork and let cool.
  • In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, salt, and black pepper.
  • Add the cooled quinoa to the vegetable mixture and toss to combine.
  • Pour the dressing over the salad and mix well.
  • Top with feta cheese if using.
  • Serve immediately or refrigerate for 30 minutes to enhance flavors.
