Ingredients

- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt & black pepper to taste
Instructions
- In a saucepan, bring water or vegetable broth to a boil. Add quinoa, cover, and simmer for 15 minutes until cooked. Fluff with a fork and let cool.
- In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, salt, and black pepper.
- Add the cooled quinoa to the vegetable mixture and toss to combine.
- Pour the dressing over the salad and mix well.
- Top with feta cheese if using.
- Serve immediately or refrigerate for 30 minutes to enhance flavors.

Notes
For extra flavor, add avocado, chickpeas, or grilled chicken. Keeps well in the fridge for up to 2 days.
