- 1 liter whole milk
- 1/2 cup fresh pistachios, finely ground
- 1/2 cup condensed milk
- 1 tsp cardamom powder
Instructions
- Blend pistachios into a fine paste and set aside.
- Heat whole milk in a heavy-bottomed saucepan over low heat.
- Stir continuously and let the milk reduce by half.
- Add condensed milk and mix well.
- Incorporate the pistachio paste gradually, stirring constantly.
- Continue simmering until the mixture thickens to a custard-like consistency.
- Allow the mixture to cool completely.
- Pour into kulfi molds or alternative freezing containers.
- Freeze for 6-8 hours until firm.
- Unmold by running warm water over the mold and serve immediately.
Notes
Use fresh, high-quality pistachios for the best flavor and a vibrant green color. For extra indulgence, garnish with chopped pistachios and a drizzle of rose syrup.
