Description

A rich and creamy Indian dessert, Pista Kulfi is a frozen treat packed with the nutty flavor of pistachios and aromatic cardamom. Perfect for summer gatherings and celebrations.


Ingredients

  • 1 liter whole milk
  • 1/2 cup fresh pistachios, finely ground
  • 1/2 cup condensed milk
  • 1 tsp cardamom powder

Instructions

  1. Blend pistachios into a fine paste and set aside.
  2. Heat whole milk in a heavy-bottomed saucepan over low heat.
  3. Stir continuously and let the milk reduce by half.
  4. Add condensed milk and mix well.
  5. Incorporate the pistachio paste gradually, stirring constantly.
  6. Continue simmering until the mixture thickens to a custard-like consistency.
  7. Allow the mixture to cool completely.
  8. Pour into kulfi molds or alternative freezing containers.
  9. Freeze for 6-8 hours until firm.
  10. Unmold by running warm water over the mold and serve immediately.

Notes

Use fresh, high-quality pistachios for the best flavor and a vibrant green color. For extra indulgence, garnish with chopped pistachios and a drizzle of rose syrup.
