Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter

 

  • ½ cup mixed fresh fruit (strawberries, blueberries, banana slices)

Instructions

  • Prepare the Batter – In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Mix Wet Ingredients – In another bowl, combine milk, egg, vanilla extract, and melted butter. Mix well.
  • Combine & Stir – Slowly add the wet ingredients into the dry ingredients, stirring until smooth.
  • Fill Muffin Tin – Grease a mini muffin tin and pour batter into each cup, filling ¾ full.
  • Add Fresh Fruit – Top each pancake bite with a mix of fresh fruit pieces.

 

  • Bake – Bake at 375°F (190°C) for 10-12 minutes until golden and fluffy.

Notes

For added flavor, mix chocolate chips, blueberries, or chopped nuts into the batter before baking. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months. Reheat in a microwave or toaster oven.
