Ingredients

  • 30 g (¼ cup) cocoa powder
  • 5 g (1 tsp) baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 ripe bananas, mashed
  • 2 eggs
  • 150 g (⅔ cup) milk (almond, dairy, etc.)
  • 1 g (optional) sweetener (stevia, honey, maple syrup)
  • 1 tsp vanilla extract
  • 30 g (1 oz) walnuts, chopped
  • 30 g (1 oz) dark chocolate, melted or chopped (for topping)

Instructions

 

  • Preheat oven to 175°C (350°F). Grease a baking pan or line it with parchment paper.
  • In a bowl, mix oat flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mash the bananas, then add eggs, milk, sweetener, and vanilla extract. Mix well.
  • Combine the wet ingredients with the dry ingredients and stir until smooth.
  • Fold in the chopped walnuts.
  • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Let the cake cool, then top with melted or chopped dark chocolate before serving.

Notes

For a vegan option, use flax or chia eggs. Store in an airtight container in the fridge for up to a week or freeze for up to 3 months. Enjoy with Greek yogurt, almond butter, or a drizzle of dark chocolate sauce for extra indulgence.
