  • 12 green chilies, chopped (adjust to spice preference)
  • 4 cups chicken broth (low sodium if preferred)
  • 1 cup canned green chilies (or fresh roasted, chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 cup white beans (optional for extra heartiness)
  • ½ cup corn kernels (optional for sweetness)
  • ½ cup heavy cream or coconut milk (for a creamy texture, optional)
  • Juice of 1 lime

 

  • ¼ cup fresh cilantro, chopped

Instructions

1️⃣Heat the Oil – In a large pot over medium heat, add 1 tbsp olive oil.

2️⃣ Sauté the Aromatics – Add chopped onions and garlic, cook until fragrant (2 minutes).

3️⃣ Add Chilies – Stir in chopped green chilies and cook for another minute.

4️⃣ Season the Base – Sprinkle in cumin, oregano, smoked paprika, salt, and black pepper, stirring well.

5️⃣ Add Chicken – Mix in shredded cooked chicken and stir to combine.

6️⃣ Pour the Broth – Add 4 cups chicken broth, canned green chilies, white beans (optional), and corn (optional).

7️⃣ Simmer the Soup – Bring to a boil, then reduce heat and let it simmer for 15-20 minutes.

8️⃣ Final Seasoning – Stir in fresh lime juice and chopped cilantro.

9️⃣ Optional Creaminess – If desired, add ½ cup heavy cream or coconut milk for a creamy texture.
