Description
A delicious homemade version of Chick-fil-A’s famous Cobb Salad, featuring crispy chicken, fresh greens, and a flavorful dressing.
Ingredients
Salad Base
4 cups romaine lettuce chopped
1/2 cup grape tomatoes halved
1/2 cup sweet corn roasted or canned
1/4 cup shredded Monterey Jack & Cheddar cheese
2 boiled eggs chopped
4 slices cooked bacon crumbled
Chicken
2 boneless, skinless chicken breasts
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika
Avocado Lime Ranch Dressing
1/2 avocado mashed
1/4 cup mayonnaise
1/4 cup Greek yogurt
2 tbsp lime juice
1 tbsp fresh cilantro chopped
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
2 tbsp buttermilk (to adjust consistency)
Instructions
- Season chicken with salt, pepper, garlic powder, and paprika Heat olive oil in a pan and cook chicken for 5-6 minutes per side until golden and fully cooked Slice into strips
- Blend all dressing ingredients until smooth Add buttermilk to reach desired consistency
- Assemble the salad by layering romaine lettuce, grape tomatoes, corn, cheese, boiled eggs, and crumbled bacon
- Add sliced chicken on top and drizzle with avocado lime ranch dressing
- Serve fresh and enjoy!
Notes
For a lighter version, use grilled chicken instead of fried. You can also add more toppings like cucumbers or red onions for extra crunch!
