- 1 whole brie wheel (about 200–250 g)
- 150 g (1 cup) mixed olives (green, black, or kalamata)
- 60 ml (¼ cup) extra virgin olive oil
- 2 cloves garlic, thinly sliced
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 tsp red pepper flakes (optional)
- 1 tbsp honey (optional for sweetness)
- Freshly ground black pepper, to taste
- Baguette slices or crackers, for serving
Instructions
- Preheat oven to 180°C (350°F).
- Prepare the herb-infused oil: In a small pan, heat the olive oil over low heat. Add sliced garlic, rosemary, thyme, and red pepper flakes. Let it simmer for 3-5 minutes until fragrant, then remove from heat.
- Warm the olives: Add the mixed olives to the pan with the herb-infused oil and stir gently to coat them in the flavors.
- Bake the brie: Place the brie wheel in an oven-safe dish or on parchment paper. Pour the warm olive and herb-infused oil mixture over the brie.
- Bake for 10-12 minutes until the brie is soft and slightly melted inside.
- Serve immediately with toasted baguette slices or crackers. Optionally, drizzle with honey for a sweet-savory contrast.
